Hot green sauce

Hot Green Sauce is a new zesty and fiery sambal style sauce, crafted in batches.

We have combined the culinary logic of sub-continental chilli & coconut sambals with the flavour Ferrari that is Jamaican jalapeno green sauce.

Good with chicken and fish, Hot Green Sauce will perk up any summer BBQ. Add to tacos or wraps, for a zesty chilli hit.

Smoky wing sauce

As with every product from Genuous, our Wing Sauce is engineered to do turn a chicken wing into a proper grown up HOT WING. It’s a fiery mix of smoked chillies and red bell pepper with lashings of roast garlic and earthy spices.

It serves as a great marinade as well as a baste for your cooking wings as they smoulder on the BBQ. Mix it with ketchup or mayo for a great dipping sauce as well.

We combine our favourite elements of wood smoking, Dixie hot sauces, the Caribbean, and trade route spicing to create unique tastes for everyday use.

City Pantry

You can now order some seriously satisfying food cooked by us straight to your office.

We love cooking with smoke and fire just as much as we love making sauces. We are combining those passions and you can order the results through the City Pantry website.

Choose from some proper Memphis style smoked BBQ, including pulled pork, lamb ribs and hot wings, or seriously meaty vegan ribs and BBQ oyster mushrooms. Alternatively you can opt for lavash wraps generously filled with tandoori chicken cooked fresh in our clay oven, or tangy chickpea masala.

Genuous BBQ ribs

Serves 4

 

  • 800 pork belly ribs (rack or individual)
  • 1 bottle Genuous Hot brown Sauce
  • 1 litre apple juice

Remove ribs from packaging and place into a container that will fit into your fridge

Pour ⅔ of a bottle of Genuous Hot Brown Sauce over the ribs and rub until they are coated all over. Cover container and leave in fridge for at least 4 hours or ideally 24 hours.

Set oven to 150 degrees celsius.

Remove ribs from container and place into oven proof dish.

Pour apple juice into container until ribs are half submerged (depending on size of your dish this should be around 700ml).

Cover dish tight with foil to seal and place into oven for 3 hours.

Mix remaining Genuous Hot Brown Sauce with a little apple juice to loosen.

After 3 hours in the oven, remove the foil and brush the ribs with the Hot brown sauce and apple juice mix to coat. Raise the oven temperature to 200 degrees celsius and leave for a further 25 minutes or until the ribs are beginning to caramelise.

Remove from the oven and (if ribs are in a rack) cut into portion sizes. Coat ribs with juices left in bottom of oven dish and serve.
